When President George Bush, declared in 1990 that ''I do not like broccoli, and I haven't liked it since I was a little kid and my mother made me eat it. And I'm President of the United States, and I'm not going to eat any more broccoli!'' I stood and cheered! Such was my dislike for Lentils.
But as I enter into another fast, I am finding it harder to get the necessary nutrients and I have finally found a recipe I can not only swallow but enjoy.

Half a bag of Lentils is all we make at a time. |

Lentils... look for small pebbles. |

Rinse with warm water. |
|
Fill large pot with enough water so the lentils have room for movement while boiling. |

Boil for 5 minutes. Water will get cloudy. |
|
Strain lentils, to remove dark water but no need to rinse. I've found the meal to be lighter when I rinse out the water. |

Have three quarts of boiling water on stove ready to quickly return to cooking the beans. |

Return to boil. |
Chop 2 celery stalks, 3 carrots, 1 onion, parsley, 4 whole garlic cloves and add to soup.
Also add 1/2 c tomato sauce, 1 bay leaf, 1 t salt and 1/4 t pepper.

Cook for another 30 minutes and remove foam if necessary. |

Add olive oil at end to taste. I don't know why my mom uses such a small spoon. |

Add your choice of vinegar to taste. |

Thanks, Lindsay! So glad you liked it. I just had some lentil soup made by someone else... It was also yummy! Although she sautéed the veggies first, which adds flavor... after the soup was boiling, she added a WHOLE BULB of garlic.... maybe 10 whole cloves! It was so good I can't wait to make the soup myself.
I finally delved into lentils about a year ago. I resisited because I hate most legumes..lima beans, pinto beans, black beans etc. But I made a lentil soup and fell in love! Next time I plan on making a lentil soup, I am going to try your recipe! I love that you only make half a bag at a time.

My recipe is also very nice, you get a thick soup at the end.
First of all, I put the lentiles (250gr, for 3 persons) in some water for 4 to 6 hours. Then i rinse them with clean water. I put some oliveoil, an onion in small pieces, 1 or 2 pieces of garlic in the pot. I put the lentiles in it, add water (until 2-3 fingers above the lentiles). I put peper, salt, some paprika powder, a leave of laurel, and 1 small pot of concentrated tomato (70gr).
It has to boil for 30-40minutes. But in that time, i crush the lentiles often. It makes the soup thick, it gives more flavor.
Since last week, when we serve the soup, we put 2 spoons of rice in it. Great combination!Hopefully you like it as much as we do! In times of Fasting, this is just like a feastmeal. We almost feel bad when we eat it! Enjoy!

This recipe is very similar to how my momma made them - she never added tomato sauce, bay leaf or parsley to hers...and in her later years, she quit adding the celery - but hers were yummy. I will try your recipe because it looks yummy too. Thanks for posting it!
