This Greek cucumber sauce is a fresh addition to grilled meat and steamed rice.
With a touch of garlic, it even has a good "kick" of flavor.
Finely chop or shred 1 cucumber.
I like to keep the skin on the cucumber to add color... this one was peeled.
Add 1/2 t salt and 1/2 t garlic powder. Stir.
It is important to do this before you add the dairy. It mixes better this way.
Find a good Greek Yogurt or a sour cream. If you want to use yogurt but can't find it in a Greek style, strain a regular or low fat yogurt for 30 minutes This thickens the yogurt.
I don't keep cheese cloth on hand, so when I need to strain the yogurt, I place a few coffee filters along the sides of a strainer and then pour the yogurt on top to strain.
Add 2 heaping spoons full of yogurt.
Stir and enjoy.
This tastes even better after resting for 30 minutes or more.
